You may recall that I mentioned, in an earlier post, that Melissa and I loved the roast chicken…

…that we had at this place in Kuching when we were there for a quick weekend break. Of course we did have the slightest inkling as to how to go about cooking it but obviously, they used a lot of herbs and other than that, I did spot a few slices of lemon in the bird.

Coincidentally, my Singapore blogger-friend blogged about the roast whole chicken that he cookedΒ and shared his very comprehensive recipe and so, I printed that out for my girl and the mum to follow. I don’t know if they followed it to the letter or whether they made some adjustments here and there but this was the end result…

…and I would say that it tasted absolutely great – maybe it could do with a bit more of the herbs but it was really good. I did hear my missus mention in passing that she did reduce the amount used in case the “smell” would be too strong. Hmmmm….I think I would love it even more had the fragrance been stronger so I would insist on the whole works when we roast one for Christmas – she did say she would want to do that when the festive season comes around and she would get a bigger bird for that and serve that instead of turkey as she isn’t all that fond of the meat.

  1. yummy yummy roast chicken!! but only one photo?? hey, that’s so not STP!!! hehe.. when it comes to roast chicken, i think besides still preferring the breast than any other parts, i also love the SKIN (paper-thin when all the oil has been “roasted away”)!!! muahahahahaha~~ πŸ˜€

  3. Really looks yummy! Certainly a good idea to have this dish for Christmas instead of turkey, less expensive than turkey, too, right?

    Yes, turkey costs a bomb these days…anytime around RM100-200, not so big one.

  4. I love roasted chicken. I tried roasting using my flip pan and just add some mixed herbs. It tasted great.

    Yes, chicken is chicken – will taste good and taste may vary according to what you use to marinate. I wonder where my missus’ flip pan is now – my girl says not as nice as using the oven. I think that has put her off the pan for good… Women, very sensitive one hor? LOL!!! πŸ˜€

  8. Roast chicken, yum!! I always want to try, have yet to try one. I saw Elaine roasted her, also lemon and herbs, i think it should be “quite easy”, let me see when is the mood kick in. hahahahha

    Seemed easy, just marinate…and then roast in the oven. Fast and very very nice!

  9. Oh that does look good, like to see how the bird seems to be heavily seasoned too. When I prepare them for loved ones, that’s what I normally do also. πŸ™‚

    We seldom roast the whole bird – mostly wings or drumsticks…but I’ve done turkey before a couple of times.

  11. Very nicely done! The roast chicken looks so delicious. The herbs do smell strong in their raw state but once cooked…ooohhhh….they smell so good πŸ™‚

    Yes, next time, I would insist on adding more. My missus is not really into western cuisine and does not fancy quite a lot of things like duck, lamb…
