I enjoyed the food at this restaurant in KL but on my first few visits, I was surprised that this was their signature dish…
– their fried egg! They told me that city people would seldom cook at home and they would drop by that place to enjoy the homecooked-like dishes and they particularly loved the egg as that would be how their mums or grandmas would fry them at home before and they grew up eating eggs done in that way.
Well, what I do know is that people fry eggs these days using the metal ring…
…especially at the hotels where they would fry many at a time on a big iron plate/grill using several metal rings all at one go, and even at the restaurants and coffee shops…
…and this one, as you can see, was too well done, I’m afraid, and would get my double thumbs down.
At some hotels, you can ask them to fry for you on the spot but they would usually use a non-stick pan and this is what you will get…
Of course, not all of them do that. Many of the stalls in the coffee shops still fry eggs like before, just that not all of them are all that bothered to do it well. This one was quite good as the top was nicely done with the egg yolk still soft and runny…
…but I would prefer more of that golden fringe along the edges…

It’s actually very easy to fry egg like that. All you would need to do is to heat up the wok, pour in some oil and wait till it is really hot before you crack an egg and drop it gently into the oil. The golden fibrous fringe will come out by itself and all you need to do is to splash the hot oil over the egg to get the top part to cook nicely. Then you can dish it out…
…and serve it with whatever you’re having.
Ok, ok…I know some of you would say that this is oily and not very healthy…but as I always say, we should not overdo it and no matter what we may love to eat and how we would like it done, it would be best to enjoy it in moderation. For one thing, I would be somewhat deterred by the mere thought of having to take out the wok and heat it well, plus the oil too, and when all is done, the chore of having to wash the oily wok and drying it and putting it away…so you can be pretty sure that I would not be having this very often. Yes, I’m that lazy… Hehehehehe!!!!
