Has your other half been grumbling that you’ve been cooking the same things all the time? Or have your kids been moaning and groaning that they’re so tired of eating the same boring dishes day in and day out? Well, you’ve got your troubles and I’ve got mine…but count your blessings! Yours are not even half as bad as mine, I assure you.
Now, let me tell you why. You see…when I cook, I will have to make sure that it has to be something that I have not cooked and featured in my blog before and when I go out to eat, I cannot go back to the same place and eat the same thing again as I would have posted on it already. Otherwise I will not have anything to blog about at all. LOL!!!
Well, thankfully, my attempts at whipping up some new dishes have been quite successful, like this meat with pineapple dish that I cooked the other day…
I guess you can use any kind of meat…and all you have to do is to cut it into thin slices and marinate it with three tablespoons of smoked barbecue sauce, two tablespoons of dark soy sauce (mainly to give it a darker colour though I was not very successful in doing this) and one scoop of gula apong (attap/palm sugar). I guess you can substitute that with sugar instead…and actually, it is to balance the saltiness of the soy sauce and the sourish taste of the pineapples.
An hour or so later, fry some 5-6 thin slices of ginger in a little bit of oil till fragrant and then put in the meat, stir a bit and cover to let it simmer. The marinade plus the juices of the meat would ooze out gradually – stir periodically to glaze the meat with the gravy. Simmer for a while to reduce the amount of liquid in the dish…and when the meat is well-cooked, add the pineapples, cut into bite-sizes, and mix thoroughly before serving…
The Chinese celery and sliced chillies are optional. I have added them merely for the colour to make the dish look more attractive.
Well, I also fried this plate of french beans as the vegetable dish that day…
…even though it wasn’t really necessary as the pineapples would be fibre-enough.
So, go ahead and give it a try! You will not be disappointed, I’m sure…as personally, I felt it was really very nice and I wouldn’t mind cooking that again when my daughter comes home for the holidays.
