When I was still working, I used to travel a lot on government duty, staying in all kinds of hotels ranging from 3 stars to 5 stars…with SIX meals a day. Even when I travelled around on my own, I would take advantage of my government rates, which would be inclusive of a complimentary buffet breakfast or two.
Usually when you go for the buffet breakfast at the hotels, there will be an egg counter with the chef standing by to cook your eggs the way you want them. I never liked the way they did the omelettes…and their scrambled eggs were always a disappointment – ending up looking like some badly messed-up omelette instead. The safest bet would be to get them to fry the eggs sunny side up/bull’s eye. They certainly do NOT make omelettes the way I do…
Well, the other morning, I decided to make a ham and cheese omelette, so I chopped up the ingredients and beat up two eggs – adding a pinch of salt and a sprinkling of chopped spring onions for extra fragrance…
Then I melted some butter in a pan…and fried the egg in it – spreading it all over the pan thinly. I put the ham and cheese on one half of the egg and folded it so that the ham and the cheese would be stuck in the middle, nicely sealed up in the omelette. After a while, I turned the whole thing over onto the other side to brown it nicely on both sides before serving it on a plate…
There! It was beautifully done on the outside…and deliciously gooey with the ham and the melted cheese on the inside…
Now, that’s what I call omelette…the way I like it! Yum! Yum! So how do you like your eggs? LOL!!!
