It’s my party…

You would have read in my previous post that my daughter’s West Malaysian friends were in town, so I asked her to invite them to the house for dinner. I decided to cook something that is not easily available in the peninsular – Sarawak laksa. Of course in order to cook that, you will need some sambal laksa

The most popular is the Swallow Brand but I had this packet that Gundot sent me sometime ago – Cap Nanas. It is nice but I prefer the one she gave me once – homemade (from somebody related to her colleague or something like that) and very pedas (chilli hot)! I bought a kilo of prawns (RM12.00)…

…removed the shell, cleaned and boiled them, keeping the stock for later use. I also bought one piece of chicken breast (RM3.00 only), boiled it and kept the stock as well…

When the meat had cooled, I shredded it into thin, long strips as in the photo. I also bought a packet of fish balls (RM3.00) in case the girls chiak bay par (not filling enough), cut them in halves and boiled them and again, I kept the stock.

To prepare the laksa gravy, I put the sambal in the stock and boiled until the laksa flavour had gone into the stock, after which, I had to seive the gravy to remove the residue of the sambal. Then I brought the gravy back to boil and added some belacan and ikan bilis (anchovies) stock and salt according to taste and santan (coconut milk). Other than that, I also fried some egg omelette and cut them into thin strips and chopped up some daun sup/ketumbar (Chinese celery)…

I also bought some taugeh (bean sprouts) – RM2.00 with the tails removed and blanched them in hot water. I prefer them nice and crunchy!

And of course, I had to soak some mihun in boiling water to soften it and I also pounded some sambal belacan and provided some kalamari/lime cut in halves to go with the laksa.

The girls enjoyed themselves and had no less than two helpings each…

The additional girl is C from Bintangor; she and my daughter are the only two from Sarawak doing the same course in Sungai Petani (Kedah). She had a prior commitment and was not able to join us for dinner at the Ruby Restaurant the previous night. Anyway, you can have a glimpse at what they had from this angle…

…and after that, they adjourned to the piano for a sing-along session. Gosh! They did not know how to sing the middle part (Do you call that the bridge?) of Nsync’s “This I promise you” and guess which 56-year-old had to come to the rescue! Step aside, Justin Timberlake! ROTFLMAO!!!
