Now when exactly was Stella in town? October? Or was it September? Well, Pollie was here too then and she gave me some instant fish curry mix from Bintulu. I guess the guy whatever-his-name-is-now who made it must be pretty good and well-known in the town. But somehow, I did not get round to cooking it until last Friday…

It was so easy really. I bought a pineapple, some ladies’ fingers and tomatoes and got the lemon grass (serai) and curry leaves from my garden. I noticed that in the restaurant, they did not cook the fish in the curry. Instead, they poured the gravy on it upon serving. So I took one piece of fish fillet and steamed it. After that, I drained the stock into a bowl and put the cooked fish fillet aside for the moment.

After chopping up one Bombay onion into fine bits, I fried that in a little bit of oil with the serai and some of the curry leaves. Then I put in the curry mix and stirred till it became really fragrant. Then I added the fish stock as well as some more water to let it simmer and cook the ladies fingers which I put in first together with the pineapples. Finally, after throwing in the pre-softened bean curd sticks, tomato chunks and the rest of the curry leaves, I added a tablespoon of sugar (to balance the sourish taste of the pineapples) and a teaspoon of salt before I thickened the gravy with half a tin of santan (coconut milk). I poured that over the fish fillet and there you have it! It was ready to serve…

I still had half a pineapple left as I did not use all of it, so I cut it into chunks and had them with ready-made kuah rojak (rojak gravy) which is now available in bottles. You do not have to buy the prawn paste from Penang and all the other necessary ingredients any more…

There! Isn’t it so very easy? And the best part is you no longer have to go to the restaurant and spend a fortune there to eat really nice fish curry! By the way, I’ve some more of Pollie’s instant fish curry mix left (I only used half of what she gave me), so is anybody coming to town? I can whip that up in a jiffy and we can enjoy a delightful dinner together! Wouldn’t that be great?

I love fish curry! Pray tell me the shop where I can get the instant fish curry mix. And I can always bring you a packet when I come to Sibu….

I don’t know. Have to wait till Pollie comes online, then maybe she can tell you. But the A1 Mountain Globe brand instant curry mix is also very nice – same procedure. My wife has cooked fish head curry with that a few times…and can rival Sheraton’s anytime. eh…if u cook the fish head separately from the curry gravy, hows the taste like? any difference from when u simmer the fish head in the gravy?
Ok…I’d better start the fire then! LOL!!! Cooking it like this, the curry will not seep into the fish so you can taste the fish itself. But for stronger tasting fish like ikan tenggiri (mackerel) or ikan bawal hitam (black pomfret), I would cook it in the gravy. Problem is with fish fillet or fish cut into slices, if you simmer in the gravy for too long (especially when reheating), it will disintegrate and you will have the bits of fish (and bones) all over the place.

Hi, I am back. I had curry fish head in KL but it was too spicy although I reminded them several times not to prepare a spicy one for me.
This one not spicy…so next time I think I’ll have to add extra chillies. I like it hot! Hahahahahaha!!!

I like the fish curry. Your previous one where u prepared own gravy also yummy. May cook again later in the week. May use mackerel this time.
The one with curry powder? That one have to pound this and that, this one no need. I think this one’s nicer, probably cos a lot more ingredients in the instant curry mix.

So when are you ever coming to Sibu? Nice place, lots of nice food and nice people! And you don’t need a lot of money to have a holiday here!

i think the yr curry a bit pale or is it yr camera..hihi..can compete with Sheraton? this is the best in Bintulu – from David Law seafood restaurant at Medan Jaya next to KFC.
I like the Kuah Rojak-only know about this brand when am asked by M to bring over to Canton.
Too much light…but it is just a bit darker than this, not reddish. Maybe could do with more chillies. OK, everybody! Now you all know where to get the instant fish curry mix in Bintulu. Make sure you tell them you read it in STP’s blog…and I may get a free meal when I go there one day! LOL!!!…..Wah! With all the nice food in Canton, they still craved for our Malaysian rijak kah> LOL!!!

Ya, homemade tenggeri fishballs are nice. I usually put that in my masak lemak…but good fishballs, I’d rather have them in clear soup with tang hoon.
