I got it from my mama…

Indeed, I learnt how to cook, including all those ethnic kampung culinary delights (that I have featured in some of my earlier posts) from my mama. In the past, when I used to entertain at home quite regularly, I would ask her to make this very simple dish…and without fail, it would go down very well with my guests. All of them would love it so much and sing its praises. This is a vegetable dish – cucumber, to be exact, with sambal udang kering (dried prawns sambal).

You will need some chillies, sambal belacan (prawn paste) and sugar and you pound all these together…

and then you add the udang kering (dried prawns) that you have soaked in hot water and pound that as well…

Those of you from outside Sarawak may wonder why the udang kering (dried prawns) looks different. This is the type we have here – huge and straight…and quite expensive, around RM60-70 a kg. We call it Rajang hay bee (Rajang dried prawns) in Hokkien. I would buy some for my friends in West Malaysia everytime I went over and each time, they would ask, “Why are they straight?” I would just reply, “Because they are not gay!” LOL!!! Catch the drift? Ooo…they love it so much, especially with their beer or liquor! Well, normally, it looks quite red but after soaking, it loses some of its colour. So after pounding that together with the ingredients earlier, this is what you will get…

Then, you will need some lime. Cut them in halves, remove the seeds and squeeze in the juice. Mix it thoroughly with the pounded ingredients…

Having done that, you can take the cucumber and cut it into slices…

Then you arrange the slices on a plate and distribute the sambal udang kering evenly on top. If you have a lot of cucumber, you can arrange them in layers and put some of the sambal in between…

I like keeping it in the fridge before serving, so it will nice and cold…and absolutely delicious! Easy, isn’t it? No hassle! No cooking required! No oil, no salt, no msg!!! You think you wanna give it a try?

  2. Wah, use rejang hay bee. Expensive dish!! Ordinary hay bee also can. This is another of JFV favourite. To improve the presentation slice hard boil eggs and place them on top of the cucumbers.

    Only one handful! Around RM1 only!…This one was for own consumption. If got guests, can also have JFV’s spring onion flowers with a slice of chilli pierced thru’ them!

    Got! That bird’s nest shop next to McDonalds in Padungan. I saw not very big packets, maybe half kg (Hope it wasn’t 250 gm) for RM50!!! So expensive!

    Yes! But my missus used up all my chillies, only one left! I added a few chilli padi…but I don’t really like! Just pedas, don’t taste so nice!!!

  7. When i used to visit Sibu regularly when my mum was still around, i got this friend who told me if i want to get him a gift, buy him the dried prawns straight ones mind u not the ‘wan-wan’(bengkok) ones! so fussy people like that i think i always give ‘milo’tshirt only!

    Nice! Go ahead and try!!! Some people like it more watery, so they add more lime and more sugar! I prefer less so it will not drown the udang kering taste.

  14. ya stp, sugar less is better for you!!! Everything also need to be LESS LoL!!!

    That’s why my sambal a bit dry. Less lime so that I would not need to add that much sugar so it would not be too sour! Cucumber ok what!!!…The vegetable, that is! LOL!!!

  17. Yeah, it cost around RM60-70 per kg here as well. I only know it last few years when I was walking around fish market. Didn’t know i was munching on such expensive “titbit” all these kiddy years. Now no more much on them.LOL…

    Same lah like that! But these days, quite hard to get! Seems seasonal, not whole year through like before…When you were a kid, not so expensive mah!

  20. so this is how you use the hay bee. I thought it was processed, that’s why it looked so different. My student gave me a big packet last year, i used them all to fry vegetables and ikan panggang and sambal petai. Ghee, your blog is giving me ideas about food. If you ever come to Penang, I can bring you to some really good places to eat.

    Last time, they’d arrange the prawns one by one by hand and dry in the sun…but these days, they do it in the factories. Much cleaner, I would think…but used to taste nicer!!! LOL!!! We use it for frying stuff as well but it is a bit expensive, so we may just use the ordinary dried prawns….Well, I hope to go over to Penang pretty soon.
